I’ve never met a protein that didn’t like a side of broccoli. Broccoli is my kids’ favorite vegetable side dish. At our house, we eat it at least once a week. Although they love the standard steamed broccoli with butter or broccoli with cheddar cheese, I get bored of the same old thing. If you’re like me, you’ll love this easy and delicious roasted (read: caramelized yumminess) broccoli recipe. The kids loved it, too!
Roasted Broccoli with Lemon and Parmesan
- 4lbs broccoli, cut into large florets
- 3 cloves garlic, sliced
- 4T olive oil
- 1t salt
- black pepper to taste
- Juice of half a lemon
- 1/3c freshly grated parmesan cheese
Preheat oven to 425.
Line baking sheet with foil.
Spread broccoli and garlic over foil and drizzle with olive oil. Salt and pepper, then toss.
Roast 25 minutes, stirring halfway through cooking.
Remove from oven and squeeze lemon juice over top. Sprinkle with cheese and allow to melt before serving.
