Cheddar Irish Soda Bread

Just in time for St. Patrick’s Day tomorrow, I’ve whipped up this fantastic Irish quick bread for you. In fact, I have seen dozens of soda bread recipes floating around the blogosphere this month, and wasn’t sure I was even going to be making any for you until this particular recipe caught hold of my tastebuds.

I went the savory route with this gooey, cheesy version. It comes together in no time – straight from the mixing bowl to the oven, and in less than an hour you have freshly made bread. Cheddar Irish Soda Bread

Yields: 1 large loaf

  • 4c flour
  • 2T sugar
  • 1t baking soda
  • 1t salt
  • 1T dried parsley
  • 1/4t garlic powder
  • 1/4t onion powder
  • 4T cold unsalted butter, diced
  • 1c cheddar cheese, roughly chopped
  • 1-½c cold buttermilk
  • 1 egg, lightly beaten

Preheat oven to 375. Line a baking sheet with parchment paper.

To the bowl of a stand mixer, add flour, sugar, baking soda, and seasonings.Stir. Add cold butter and mix until combined. Add cheddar cheese so it gets coated with flour mixture before the wet ingredients are added.

Whisk together the buttermilk and egg. Turn mixer on low and gradually pour in the liquid. Mix until a ball of dough forms.

Turn out onto a floured work surface and shape into a round loaf. Place on parchment paper and slice a large "x" on the top of the loaf.

Bake 50-60 minutes until cooked through.
