Happy 2013! I’m excited to start the New Year off with this quick, easy, and delicious dinner option (also great for lunch) that the whole family will love.
I adapted The Pioneer Woman’s basic sesame noodle recipe and added chicken and edamame to kick up the protein. I also think the addition of fresh cilantro and Sriracha to finish takes this over the top. Grab your chopsticks and dig in.
Sesame Noodles with Chicken & Edamame

Yields: 6-8 servings
- 12oz angel hair pasta noodles, cooked al dente and drained
- 1/4c soy sauce
- 1T sugar
- 4 cloves garlic, minced
- 2T rice wine vinegar
- 1T sesame oil
- pinch of red pepper flakes
- 4T canola oil
- 1lb chicken breasts, cooked and chopped
- 1c edamame (soy beans) removed from pods
- 1/4c cilantro, chopped
- Sriracha, for serving (optional)
While you're cooking the noodles, whisk together the soy, sugar, garlic, vinegar, oils, and red pepper flakes until sugar is dissolved. Add to a large serving bowl with the chicken and edamame. When noodles are done, pour them while hot into the bowl with the other ingredients and toss well to combine. Serve with cilantro on top and Sriracha on the side.
